Chicken Fajita Rollups

What you need:
Marinade
○ 2 tbsp olive oil
○ juice of 1/2 a lime
○ 1 garlic, minced
○ 1 tsp chili powder
○ 1/2 tsp cumin
○ 1/2 tsp dried oregano
○ 1/2 tsp salt
○ 2 tbsp cilantro
Chicken
○ 3 chicken breasts
○ 1/2 red bell pepper

Instructions:
1) Preheat oven to 375F.
2) In a small bowl, whisk together all the ingredients for the marinade and set aside.
3) Butterfly the chicken breasts and pound with a mallet.
4) Place cutlets into a large Ziploc-type bag and pour the marinade over.
5) Marinate 1 hour, to overnight.
6) Evenly place 6 bell pepper slices in the middle of the chicken, roll up and hold in place with a toothpick.
7) Place the seam side down in a baking dish.
8) Brush chicken tops with the leftover marinade.
9) Bake for 25-30 minutes, until the juice runs clear.
